    Prepare the tortillas

    Preheat your oven to 350°F (175°C). Warm the corn tortillas in a skillet for about 30 seconds on each side to make them pliable.

    Assemble the enchiladas

    Spread a thin layer of enchilada sauce on the bottom of a baking dish. Take one tortilla, fill it with a sprinkle of cheese and some chopped onions, roll it up and place it seam side down in the baking dish. Repeat with the remaining tortillas.

    Top and bake

    Pour the remaining enchilada sauce over the rolled tortillas. Sprinkle the rest of the cheese on top. Bake in the preheated oven for 20-25 minutes until the cheese is bubbly and slightly golden.

    Remove from oven and let cool for a few minutes. Serve with sour cream on the side.
