    Prepare the Marinade

    In a bowl, mix olive oil, lime juice, cumin, paprika, garlic powder, salt, and black pepper. Add fish or shrimp and marinate for at least 15 minutes.

    Cook the Fish/Shrimp

    Heat a grill or skillet over medium-high heat. Cook the marinated fish or shrimp for about 3-4 minutes on each side or until cooked through. Remove and set aside.

    Sauté the Spinach

    In the same skillet, add fresh spinach and sauté until wilted, about 2-3 minutes. Remove from heat.

    Assemble the Enchiladas

    To assemble, take a corn tortilla, add some sautéed spinach, shredded cheese, and grilled fish/shrimp. Roll it up and place seam-side down in a baking dish.

    Bake

    Preheat the oven to 350°F (175°C). Bake the enchiladas for 15-20 minutes until heated through and cheese is melted.

    Serve

    Serve the enchiladas topped with sour cream, pico de gallo, and avocado slices.
