Fajita Filling Preparation

    Marinate the Meat

    In a bowl, combine the beef and chicken with olive oil, fajita seasoning, salt, and black pepper. Mix well to coat the meat evenly. Cover and let marinate for at least 30 minutes.

    Prepare the Vegetables

    Slice the bell peppers and onion into thin strips. Set aside.

    Grill the Meat

    Preheat a grill or grill pan over medium-high heat. Once hot, add the marinated beef and chicken. Grill for about 5-7 minutes per side or until fully cooked. Remove from the grill and let rest for 5 minutes before slicing into strips.

    In the same grill or pan, add the sliced bell peppers and onion. Grill for about 4-5 minutes, stirring occasionally, until they are tender and slightly charred. Remove from heat.

    In a large mixing bowl, combine all-purpose flour, baking powder, and salt. Mix well. Add the lard or vegetable shortening and mix until crumbly. Gradually add warm water, mixing until a soft dough forms.

    Transfer the dough to a floured surface and knead for about 2-3 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.

    Roll Out the Tortillas

    Divide the dough into 8 equal pieces. Roll each piece into a ball and then flatten it into a circle about 6-8 inches in diameter on a floured surface.

    Cook the Tortillas

    Heat a skillet or griddle over medium-high heat. Cook each tortilla for about 1 minute on each side, or until lightly browned and cooked through. Keep warm in a clean kitchen towel.

    Take a warm tortilla, add a generous portion of the grilled meat, and top with grilled vegetables. Serve immediately, optionally with toppings like sour cream, guacamole, or salsa.
