Method
Marinating the Sirloin

Prepare the Marinade
In a bowl, combine olive oil, soy sauce, lime juice, minced garlic, cumin, chili powder, salt, and black pepper to create the marinade.

Marinate the Sirloin
Place the USDA Prime Aged Sirloin in a resealable plastic bag or a shallow dish. Pour the marinade over the steak, ensuring it is well-coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes or up to 2 hours.

Cook the Rice
Add the long grain rice to the saucepan and stir for an additional 2 minutes. Pour in the chicken broth and tomato sauce, add garlic powder, and salt. Bring it to a boil then reduce the heat to low. Cover and simmer for 15-20 minutes or until the rice is cooked and the liquid is absorbed.

Making Tortilla Soup

Prepare the Base
In a pot, combine chicken broth, diced tomatoes, chopped onions, and minced garlic. Bring to a boil.

Simmer the Soup
Reduce the heat and let the soup simmer for 20 minutes. Season with salt to taste.

While the soup simmers, cut the tortillas into strips and lightly fry them in a pan until crispy.

In a bowl, mix together tomato sauce, chipotle sauce, lime juice, honey, chopped cilantro, and salt until well blended.
