    Prepare the Vegetables

    Wash and slice the bell peppers, red onion, zucchini, and mushrooms into thin strips.

    Marinate the Vegetables

    In a large bowl, combine olive oil, lime juice, cumin powder, chili powder, garlic powder, salt, and black pepper. Add the sliced vegetables and corn, and toss to coat evenly. Let marinate for at least 30 minutes.

    Prepare Mesquite Fire

    If using a grill, prepare a mesquite fire by lighting mesquite wood and allowing it to burn down until the coals are hot and glowing.

    Grill the Vegetables

    Place the marinated vegetables on a grill basket or skewers. Grill for 8-10 minutes, turning occasionally until the vegetables are tender and have grill marks.

Serving

    Warm the Tortillas

    While the vegetables are grilling, warm the flour tortillas on the grill for about 1 minute on each side or until pliable.

    Remove the grilled vegetables from the grill and place them in the warm tortillas. Top with sliced avocado, fresh cilantro, and a dollop of sour cream if desired.
