Wash and pat dry the chicken thighs. Dice the red bell pepper and onion, and mince the garlic cloves.

In a large skillet, heat the olive oil over medium-high heat. Add the chicken thighs skin-side down and sear until golden brown, about 5-7 minutes. Flip and sear the other side for an additional 5 minutes. Remove the chicken from the skillet and set aside.

In the same skillet, add the diced onion and red bell pepper. Sauté for 5 minutes until they start to soften. Add the minced garlic and sauté for another minute until fragrant.

Stir in the canned diced tomatoes and chicken broth. Add the paprika, cumin, salt, black pepper, and chili flakes. Mix well to combine.

Return the seared chicken thighs to the skillet, nestling them into the sauce. Cover and let simmer on low heat for about 25-30 minutes until the chicken is cooked through and tender.
