Cooking Pasta

    Boil Water

    In a large pot, bring 4 cups of water to a boil. Add 1 tsp of salt.

    Cook Pasta

    Once the water is boiling, add 2 cups of pasta. Cook according to package instructions until al dente, usually about 8-10 minutes.

    Drain Pasta

    Once cooked, drain the pasta and set aside, reserving 1 cup of pasta water.

Preparing the Sauce

    Sauté Garlic

    In a large skillet, heat 2 tbs of olive oil over medium heat. Add 3 minced garlic cloves and sauté for 1-2 minutes until fragrant.

    Add Tomatoes

    Add 1 cup of halved cherry tomatoes to the skillet. Cook for 3-4 minutes until they start to soften.

    Add Spinach

    Stir in 2 cups of fresh spinach and cook until wilted, about 2 minutes.

    Combine Pasta

    Add the drained pasta to the skillet along with 0.5 cup of grated Parmesan cheese. Mix well.

    Adjust Consistency

    If needed, add reserved pasta water a little at a time to loosen the sauce to your desired consistency.

Seasoning and Serving

    Season the Dish

    Add salt and black pepper to taste, and if desired, sprinkle in red pepper flakes for heat.

    Top with fresh basil before serving.
