Cook the Beef
In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it up with a spoon, about 5-7 minutes. Drain excess fat if necessary.

Season the Mixture
Sprinkle the taco seasoning, salt, and black pepper over the beef and vegetable mixture. Stir well to combine and cook for an additional 2-3 minutes until everything is heated through.

Add Cheese
Remove the skillet from heat and stir in the shredded cheddar cheese until melted and well incorporated.
Quesadilla Assembly

Prepare the Tortillas
Heat a separate skillet over medium heat and add 1 tablespoon of olive oil. Place one tortilla in the skillet.

Fill the Quesadilla
Spread a generous portion of the beef and cheese mixture over half of the tortilla. Fold the tortilla in half to cover the filling.

Cook the Quesadilla
Cook the folded quesadilla for about 2-3 minutes on each side, until golden brown and crispy. Add more olive oil if needed.

Repeat Process
Repeat the process with the remaining tortillas and filling, adding more oil to the skillet as necessary.

Serve
Cut each quesadilla into wedges and serve hot with sour cream, salsa, and sliced avocado on the side.
