Omelet Preparation

    Prepare the Ingredients

    Chop the mushrooms, onion, red and green bell peppers, and your choice of protein into small pieces.

    Beat the Eggs

    In a bowl, crack the three eggs, add salt and black pepper, and whisk until well combined and slightly frothy.

    Cook the Fillings

    In a non-stick skillet, melt the butter over medium heat. Add the chopped mushrooms, onion, red and green bell peppers, and your choice of protein. Cook until the vegetables are tender and the protein is cooked through, about 5-7 minutes.

    Cook the Omelet

    Pour the beaten eggs into the skillet over the cooked fillings, tilting the pan to spread the eggs evenly. Cook for about 3-4 minutes or until the edges start to lift from the skillet.

    Add Cheese

    Sprinkle the Monterrey cheese on one half of the omelet. Once the eggs are mostly set, fold the omelet in half over the cheese and cook for another minute.

    Serve

    Slide the omelet onto a plate and serve hot with red and green salsa on the side and sliced avocado.
