Taco Filling Preparation

    Cook the Chorizo

    In a skillet over medium heat, cook the Mexican chorizo until browned and fully cooked, breaking it apart with a spatula, about 5-7 minutes.

    Sauté Vegetables

    Add diced onion and bell pepper to the skillet with the chorizo. Sauté until the vegetables are soft, about 5 minutes.

    Scramble the Eggs

    Whisk the eggs in a bowl and pour them into the skillet. Stir gently until the eggs are fully cooked and mixed with the chorizo and vegetables, about 3-4 minutes.

    Add Cheese

    Sprinkle the cheddar cheese over the egg mixture, allowing it to melt slightly before removing from heat.

Black Refried Beans Preparation

    Prepare the Beans

    In a small pot, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

    Cook the Beans

    Add the canned black beans (drained) to the pot along with cumin, salt, and black pepper. Mash with a fork or potato masher until desired consistency is reached. Cook for about 5 minutes, stirring occasionally.

Assemble the Tacos

    In a separate skillet, warm the tortillas over medium heat for about 1-2 minutes on each side until pliable.

    Fill the Tacos

    Place a generous amount of the chorizo, egg, and cheese mixture onto each tortilla.

    Top with a spoonful of black refried beans.

    Add any optional garnishes such as sliced avocado, fresh cilantro, sour cream, or salsa.
