Dough Preparation

Mix Dry Ingredients
In a large mixing bowl, combine the all-purpose flour, baking powder, and salt. Whisk together until thoroughly mixed.

Incorporate Shortening
Add the shortening or lard to the flour mixture. Use your fingers or a pastry cutter to mix until the mixture resembles coarse crumbs.

Add Water
Gradually add warm water to the mixture, stirring until a soft dough forms. You may not need all of the water.

Knead the Dough
Transfer the dough to a floured surface and knead for about 2-3 minutes until smooth. Cover with a clean cloth and let it rest for at least 30 minutes.

Heat the Oil
In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Roll Out the Dough
After resting, divide the dough into small balls (about the size of a golf ball). Roll each ball out on a floured surface to about 1/8 inch thick.

Fry the Sopapillas
Carefully place one or two rolled-out pieces of dough in the hot oil. Fry until they puff up and turn golden brown, about 1-2 minutes per side. Remove with a slotted spoon and place on paper towels to drain excess oil.
Serving

Serve with Honey
Serve the sopapillas warm, drizzled with honey or alongside a small bowl of honey for dipping.
