Preparation of Protein

Cook the Protein
In a large skillet over medium heat, add the ground beef or chicken. Cook until browned, breaking it up with a spatula, about 5-7 minutes.

Add Seasonings
Once the protein is cooked through, drain excess fat if necessary. Add taco seasoning, salt, and pepper. Stir well and let it simmer for another 5 minutes.
Cooking Rice and Beans

Cook the Rice
In a separate pot, bring 2 cups of water to a boil. Add rice, reduce heat to low, cover, and simmer for 15-20 minutes until rice is tender and water is absorbed.

Heat the Beans
While the rice is cooking, open the can of beans, rinse them under cold water, and heat in a small saucepan over medium heat until warm.
Assembly

Prepare Taco Shells
Warm the taco shells according to package instructions, either in the oven or microwave.

Assemble the Tacos
Take a warm taco shell and fill it with a layer of rice, then add the cooked protein, followed by black beans.

Add Toppings
Top with shredded lettuce, diced tomatoes, shredded cheddar cheese, and a dollop of sour cream. Add sliced avocado and salsa to taste.
