Prepare the Taco Filling

Cook the Meat
In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté until translucent, about 3-4 minutes.

Add Garlic and Spices
Stir in the minced garlic, ground cumin, chili powder, salt, and black pepper. Cook for 1 minute until fragrant.

Add Ground Beef or Chicken
Add the ground beef or shredded chicken to the skillet. Cook until the meat is browned and cooked through, about 5-7 minutes. Drain any excess fat if necessary.
Prepare the Taco Shell

Heat the Oil
In a deep pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Tortillas
Carefully add a tortilla to the hot oil, using a spatula to fold it in half to create a taco shape. Fry for about 30 seconds to 1 minute on each side until crispy and golden brown. Remove and drain on paper towels.

Repeat the frying process for the remaining tortillas.
Assemble the Taco

Fill the Taco
Once the taco shells are ready, fill each shell with the cooked taco filling.

Top with shredded lettuce, diced tomatoes, shredded cheddar cheese, sour cream, and salsa as desired.
