Method
Marinade Preparation

Prepare the Marinade
In a mixing bowl, whisk together olive oil, lime juice, minced garlic, cumin, chili powder, paprika, salt, and black pepper until well combined.

Marinate the Skirt Steak
Place the skirt steak in a large resealable plastic bag or shallow dish. Pour half of the marinade over the steak, seal or cover, and refrigerate for at least 30 minutes, ideally up to 2 hours.

Marinate the Shrimp
In a separate bowl, add the shrimp and the remaining marinade. Toss to coat and let marinate in the refrigerator for about 15-30 minutes.

Preheat the Grill
Preheat your grill to medium-high heat, around 400-450°F (200-230°C).

Slice the Steak
After resting, slice the skirt steak against the grain into thin strips.

Assemble the Fajitas
On each flour tortilla, place a mix of grilled steak, shrimp, grilled vegetables, and top with sour cream, shredded cheese, fresh cilantro, and avocado slices.

Serve the fajitas immediately with lime wedges on the side if desired.
