Marinade Preparation

    Prepare the Marinade

    In a mixing bowl, whisk together olive oil, lime juice, minced garlic, cumin, chili powder, paprika, salt, and black pepper until well combined.

    Marinate the Skirt Steak

    Place the skirt steak in a large resealable plastic bag or shallow dish. Pour half of the marinade over the steak, seal or cover, and refrigerate for at least 30 minutes, ideally up to 2 hours.

    Marinate the Shrimp

    In a separate bowl, add the shrimp and the remaining marinade. Toss to coat and let marinate in the refrigerator for about 15-30 minutes.

Grilling

    Preheat the Grill

    Preheat your grill to medium-high heat, around 400-450°F (200-230°C).

    Grill the Skirt Steak

    Remove the skirt steak from the marinade, allowing excess marinade to drip off. Grill for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached. Remove from the grill and let it rest for 5 minutes.

    Grill the Shrimp

    While the steak is resting, grill the marinated shrimp for about 2-3 minutes per side or until they turn pink and opaque.

    Grill the Vegetables

    On the grill, add the sliced bell peppers and onion. Grill for about 5-7 minutes until they are tender and slightly charred.

Assembly

    Slice the Steak

    After resting, slice the skirt steak against the grain into thin strips.

    Assemble the Fajitas

    On each flour tortilla, place a mix of grilled steak, shrimp, grilled vegetables, and top with sour cream, shredded cheese, fresh cilantro, and avocado slices.

    Serve

    Serve the fajitas immediately with lime wedges on the side if desired.
