    Prepare the cheeses

    Grate the cheddar and Monterey Jack cheeses and mix them together in a bowl.

    Preheat the oven

    Preheat your oven to 180°C (350°F).

    Layer the nachos

    Spread half of the tortilla chips on a baking sheet. Evenly distribute half of the cheese mixture over the chips.

    Add jalapeños

    Sprinkle half of the sliced jalapeños over the cheese layer.

    Repeat layers

    Add the remaining tortilla chips, followed by the rest of the cheese mixture and jalapeños.

    Bake the nachos

    Drizzle olive oil over the nachos, then bake in the preheated oven for about 10-15 minutes, or until the cheese is melted and bubbly.

    Serve with toppings

    Remove from the oven and serve immediately with sour cream and guacamole on the side.

    Rinse the rice

    Rinse the long-grain rice under cold water until the water runs clear.

    Cook the rice

    In a saucepan, combine the rinsed rice, water, olive oil, and salt. Bring to a boil over medium-high heat.

    Simmer and cover

    Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 15 minutes or until the water is absorbed.

    Fluff the rice

    Remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork before serving.
