Prepare Pork Enchilada Filling

    Cook the Pork

    In a large pot, add the pork shoulder and cover it with water. Bring to a boil, then reduce to a simmer. Cook for 2-3 hours or until the pork is tender and shreds easily.

    Sauté Onions and Garlic

    In a skillet, heat a little oil over medium heat. Add the chopped onion and sauté for 5 minutes until translucent. Add the minced garlic and sauté for another minute until fragrant.

    Combine Filling Ingredients

    Once the pork is cooked, shred it using two forks. In a large bowl, combine the shredded pork, sautéed onions, garlic, enchilada sauce, shredded cheddar cheese, chopped cilantro, salt, and pepper. Mix well.

Assemble Brisket Tostada

    Spread Refried Beans

    Take each tostada shell and spread a layer of refried beans evenly on top.

    Top the refried beans with a generous amount of shredded brisket.
