Fish or Shrimp Marinade

    Prepare the Marinade

    In a bowl, combine lime juice, garlic powder, ground cumin, paprika, olive oil, salt, and black pepper. Mix well.

    Marinate the Protein

    Add the white fish fillets or shrimp to the marinade, ensuring they are well-coated. Cover and let marinate in the refrigerator for at least 30 minutes.

Spinach Enchilada Filling

    Sauté the Vegetables

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add finely chopped onion and minced garlic, sautéing until the onion is translucent.

    Add the chopped spinach to the skillet and cook until wilted. Remove from heat and let cool slightly.
