Tamale Dough Preparation

    In a large mixing bowl, combine masa harina, baking powder, and salt. Whisk until evenly mixed.

    Add vegetable shortening to the dry ingredients. Using your fingers or a pastry cutter, mix until the mixture resembles coarse crumbs.

    Gradually add chicken broth, mixing with your hands or a wooden spoon until a smooth dough forms. Set aside.

Pork Filling Preparation

    In a large pot, add pork shoulder, water, chopped onion, and garlic cloves. Bring to a boil, then reduce heat and simmer for about 2 hours, or until pork is tender.
