Method

Steak

  1. 1

    Prepare the Steak

In a bowl, combine olive oil, garlic powder, paprika, salt, black pepper, and lime juice. Mix well.

  2. 2

    Marinate the Steak

Add the skirt steak to the marinade, ensuring it is well coated. Let it marinate for at least 30 minutes, or up to 2 hours for maximum flavor.

  3. 3

    Grill the Steak

Preheat the grill to medium-high heat. Grill the marinated skirt steak for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached. Remove from heat and let it rest for 5 minutes before slicing.

  4. 4

    Garnish

Slice the steak against the grain and garnish with fresh cilantro, if desired.

Breakfast Potatoes

  1. 5

    Prepare the Potatoes

Wash and peel the russet potatoes. Cut them into small cubes.

  2. 6

    Season the Potatoes

In a bowl, toss the cubed potatoes with olive oil, onion powder, paprika, salt, and black pepper.

  3. 7

    Cook the Potatoes

Heat a skillet over medium heat and add the seasoned potatoes. Cook for about 15-20 minutes, stirring occasionally, until golden brown and tender. Garnish with fresh parsley if desired.

Eggs

  1. 8

    Prepare the Eggs

In a non-stick skillet, heat butter over medium-low heat.

  2. 9

    Cook the Eggs

Crack the eggs into the skillet. Cook for about 2-3 minutes until the whites are set but the yolks remain runny, then carefully flip the eggs and cook for another 1-2 minutes for over-easy eggs.

Assembly

  1. 10

    Serve

On a sizzling skillet, place a portion of the breakfast potatoes, top with sliced steak, and add the two over-easy eggs. Serve hot and enjoy!
