    Prepare the Marinade

    In a bowl, combine olive oil, soy sauce, Worcestershire sauce, minced garlic, chopped rosemary, cracked black pepper, and salt. Mix well to create a marinade.

    Marinate the Filets

    Place the aged filet mignon pieces in a resealable plastic bag or a shallow dish. Pour the marinade over the filets, ensuring they are well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or up to 4 hours for more flavor.

Grilling

    Prepare the Grill

    Soak the mesquite wood chips in water for at least 30 minutes. Preheat the grill to medium-high heat.

    Grill the Filets

    Remove the filets from the marinade and let any excess drip off. Place the filets on the grill and add the soaked mesquite wood chips to the grill box or directly onto the coals if using a charcoal grill. Grill the filets for about 4-5 minutes per side for medium-rare, or until they reach your desired doneness.

Serving

    Rest and Serve

    Once grilled to your liking, remove the filets from the grill and let them rest for about 5 minutes before serving. This allows the juices to redistribute. Slice and serve with your choice of sides.
