Preparation of Ingredients

    Marinate the Meat

    If using skirt steak, marinate it in a mixture of olive oil, salt, and pepper for at least 30 minutes.

    Prepare the Tortillas

    Cut corn tortillas into strips, about 1 inch wide.

    Scramble the Eggs

    In a bowl, whisk the eggs with a pinch of salt and pepper. Set aside.

Cooking

    Cook the Meat

    In a skillet over medium-high heat, add olive oil and cook the marinated skirt steak or chicken until fully cooked. For skirt steak, about 4-5 minutes per side depending on thickness. Once cooked, remove from skillet and let rest before slicing into strips.

    Fry the Tortilla Strips

    In the same skillet, add more olive oil if needed and fry the tortilla strips until golden brown and crispy. Remove and drain on paper towels.

    Scramble the Eggs

    In the same skillet, reduce heat to medium and add the whisked eggs. Stir gently until fully scrambled and cooked through, about 3-4 minutes.

    Combine Ingredients

    Add the fried tortilla strips back to the skillet with the scrambled eggs. Pour the ranchera sauce over the mixture and gently stir to combine.

    Serve

    Plate the chilaquiles mixture and top with slices of the cooked meat, shredded Monterrey cheese, a dollop of sour cream, and garnish with chopped cilantro.
