Chicken Strips

Prepare the Chicken
Cut the boneless chicken breasts into strips about 1 inch wide.

Marinate the Chicken
In a bowl, combine the buttermilk, salt, black pepper, garlic powder, and paprika. Add the chicken strips and let them marinate for at least 30 minutes.

Prepare the Breading
In a shallow dish, mix together the flour and cornstarch. In another dish, beat the eggs.

Coat the Chicken
Remove the chicken from the marinade and let excess liquid drip off. First, coat each strip in the flour mixture, then dip in the beaten eggs, and finally, coat again in the flour mixture.

Cook the Chicken
In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully add the coated chicken strips in batches. Fry for about 4-5 minutes on each side until golden brown and cooked through. If grilling, preheat the grill and cook for about 6-7 minutes per side.

Rinse the Rice
Rinse the long-grain white rice under cold water until the water runs clear to remove excess starch.

Cook the Rice
In a medium saucepan, combine the rinsed rice, water, and salt. Bring to a boil over high heat. Once boiling, reduce heat to low, cover, and simmer for about 18-20 minutes or until the rice is tender and water is absorbed.
