Prepare the Filling

Cook the Bacon or Chorizo
In a skillet over medium heat, cook the bacon or chorizo until crispy and fully cooked, about 5-7 minutes. Remove from heat and let it cool slightly before chopping into smaller pieces.

Mix the Filling
In a large bowl, combine the cooked bacon or chorizo, scrambled eggs, and shredded cheddar cheese. Mix until well combined.
Make the Quesadilla

Assemble the Quesadilla
Place one tortilla in the skillet over medium heat. Spread a generous portion of the filling mixture on one half of the tortilla. Fold the other half over the filling.

Cook the Quesadilla
Cook the folded quesadilla for about 3-4 minutes on each side, or until golden brown and the cheese is melted. Remove from the skillet and let it rest for a minute before cutting into wedges.

Repeat the process with the remaining tortillas and filling.

Mix Pico de Gallo Ingredients
In a bowl, combine diced tomatoes, red onion, chopped cilantro, lime juice, hot sauce, and salt. Mix well and let it sit for about 10 minutes to allow the flavors to meld.

Serve the quesadilla wedges on a plate alongside a generous dollop of sour cream and the Bloody Mary pico de gallo.
