Method

Preparing the Frittata

  1. 1

    Preheat the Oven

Preheat your oven to 350°F (175°C).

  2. 2

    Prepare the Egg Mixture

In a large mixing bowl, whisk together the eggs, milk, salt, and black pepper until well combined.

  3. 3

    Sauté the Vegetables

In a large oven-safe skillet, heat the olive oil over medium heat. Add the diced bell pepper and onion, and sauté until softened, about 5 minutes. Stir in the chopped spinach and cook until wilted.

  4. 4

    Combine and Cook

Pour the egg mixture over the sautéed vegetables in the skillet. Cook on the stovetop for about 2-3 minutes until the edges start to set.

  5. 5

    Bake the Frittata

Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata is fully set and lightly golden on top.

  6. 6

    Cool and Slice

Remove the frittata from the oven and let it cool for a few minutes. Slice into wedges.

Assembling the Taco

  1. 7

    Prepare the Tortillas

Warm the flour tortillas in a dry skillet or microwave until soft and pliable.

  2. 8

    Layer the Ingredients

On each tortilla, place a wedge of the frittata, followed by a scoop of pico de gallo and crumbled queso fresco.

  3. 9

    Add Protein

Top with your choice of cooked protein (chicken, chorizo, brisket, ham, or bacon).

  4. 10

    Serve with Hash Browns

Serve the Bambino Frittata Tacos with a side of crispy hash browns for a complete meal.
