Preparing the Frittata

Preheat the Oven
Preheat your oven to 350°F (175°C).

Prepare the Egg Mixture
In a large mixing bowl, whisk together the eggs, milk, salt, and black pepper until well combined.

Sauté the Vegetables
In a large oven-safe skillet, heat the olive oil over medium heat. Add the diced bell pepper and onion, and sauté until softened, about 5 minutes. Stir in the chopped spinach and cook until wilted.

Bake the Frittata
Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata is fully set and lightly golden on top.

Cool and Slice
Remove the frittata from the oven and let it cool for a few minutes. Slice into wedges.

Prepare the Tortillas
Warm the flour tortillas in a dry skillet or microwave until soft and pliable.

On each tortilla, place a wedge of the frittata, followed by a scoop of pico de gallo and crumbled queso fresco.
