Season the beef short ribs with salt and black pepper. Heat olive oil in a large skillet over medium-high heat and sear the short ribs until browned on all sides, about 4-5 minutes per side.

Prepare the Short Ribs

Remove the short ribs from the skillet and set aside. In the same skillet, add the sliced onions and garlic, sautéing until the onions are translucent, about 5 minutes.

Sauté Aromatics

Return the short ribs to the skillet. Add the beef broth and BBQ sauce. Bring to a simmer, then cover and reduce heat to low. Cook for 2-3 hours, or until the ribs are tender and falling off the bone.

Braise the Ribs

In a small saucepan, melt the smoked gouda cheese over low heat, stirring until smooth. Gradually add a splash of beef broth to thin, if necessary.

Prepare Cheese Sauce

Once the short ribs are cooked, remove from the heat. Shred the meat using two forks. In a serving dish, layer the shredded short ribs with mozzarella cheese and drizzle with the smoked gouda cheese sauce. Top with pickled onions.
