Prepare the Calamari
Rinse the calamari under cold water and pat dry with paper towels.

Mix the Coating
In a bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and cayenne pepper.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Coat the Calamari
Dredge the calamari in the flour mixture, ensuring they are well-coated. Shake off any excess flour.

Fry the Calamari
Carefully add the calamari to the hot oil in batches, frying for about 2-3 minutes or until golden brown. Avoid overcrowding the pot.

Drain and Serve
Remove the fried calamari with a slotted spoon and drain on paper towels. Serve hot with vinegar peppers and marinara sauce.
