Prepare the Patties

    Mash the Black Beans

    In a large mixing bowl, mash the canned black beans with a fork or potato masher until mostly smooth, leaving some chunks for texture.

    Mix the Ingredients

    Add the cooked quinoa, grated carrot, diced bell pepper, finely chopped onion, minced garlic, rolled oats, cumin powder, paprika, salt, and black pepper to the mashed beans. Mix well until all ingredients are combined.

    Form the Patties

    Using your hands, form the mixture into 4 equal-sized patties. Press them firmly to hold their shape.

    Cook the Patties

    In a large non-stick skillet, heat olive oil over medium heat. Once hot, add the patties and cook for about 5-6 minutes on each side, or until golden brown and crispy.

Assemble the Burger

    Prepare the Burger Buns

    Toast the whole grain burger buns in the skillet for 1-2 minutes until golden brown.

    Add Toppings

    On the bottom half of each toasted bun, place a lettuce leaf, followed by a veggie patty, sliced tomato, and avocado.

    Finish with Condiments

    Drizzle ketchup and mustard on top to taste, then cover with the top half of the bun.

    Serve the veggie burgers immediately with your favorite sides.
