1. Prepare the Vegetables
Chop the green bell pepper and red onion into small pieces.
2. Cook the Filling
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped bell pepper and onion, sautéing for about 5 minutes until softened.
3. Combine Ingredients
Add the shredded chicken to the skillet and mix well with the sautéed vegetables. Remove from heat.

4. Assemble the Quesadilla
Place a tortilla in a clean skillet over medium heat. Sprinkle about 1/2 cup of shredded cheese evenly over half of the tortilla.
5. Add the Filling
Spoon a portion of the chicken and vegetable mixture over the cheese. Top with another 1/2 cup of cheese and fold the tortilla in half.
6. Cook the Quesadilla
Cook for about 3-4 minutes on each side, until the tortilla is golden brown and the cheese has melted. If needed, add more olive oil to the skillet to prevent sticking.
7. Repeat
Repeat the assembly and cooking process with the remaining tortillas and filling.
8. Serve
Cut the quesadillas into wedges and serve hot with sour cream and salsa on the side.
