Refried Beans

Method

Refried Beans Preparation

  1. 1

    Cook the Onion and Garlic

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent. Add the minced garlic and cook for an additional minute until fragrant.

  2. 2

    Add Beans and Seasoning

Stir in the canned pinto beans (drained and rinsed), ground cumin, salt, and black pepper. Cook for 2-3 minutes, allowing the flavors to meld.

  3. 3

    Mash and Simmer

Using a potato masher or fork, mash the beans to your desired consistency. Slowly add the vegetable broth, stirring until combined. Let the mixture simmer for about 10 minutes, stirring occasionally.

  4. 4

    Finish with Lime and Cilantro

Remove from heat and stir in the lime juice and chopped cilantro. Adjust salt and pepper to taste, then keep warm.

Chips Preparation

  1. 5

    Prepare the Tortillas

Cut each corn tortilla into triangles to create chips. You can cut them into four or six pieces depending on your preference.

  2. 6

    Heat the Oil

In a large pot or deep skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  3. 7

    Fry the Chips

Carefully add the tortilla triangles to the hot oil in batches. Fry for about 2-3 minutes, turning occasionally, until they are golden brown and crispy.

  4. 8

    Drain and Season

Using a slotted spoon, remove the chips from the oil and place them on a paper towel-lined plate to drain excess oil. While still warm, sprinkle with salt to taste.
