Prepare Nutmeat Mixture

    Chop Ingredients

    Finely chop the walnuts and sunflower seeds in a food processor until they resemble a coarse meal. Transfer to a mixing bowl.

    In a skillet, heat the olive oil over medium heat. Add the chopped onion and bell pepper. Sauté for about 5-7 minutes until the vegetables are softened.

    Combine and Season

    Add the chopped walnuts, sunflower seeds, chili powder, cumin, garlic powder, salt, and black pepper to the skillet. Stir well to combine and cook for an additional 5 minutes, allowing the flavors to meld.

Assemble Tacos

    In a separate skillet, warm the corn tortillas over medium heat for about 30 seconds on each side until pliable.
