Preparation of Tofu

Prepare the Tofu
Drain the firm tofu and press it between paper towels to remove excess moisture. Cut it into 1-inch cubes.

Cook the Tofu
In a pan over medium-high heat, add 1 tablespoon of sesame oil. Once hot, add the cubed tofu and cook until golden brown on all sides, about 5-7 minutes. Remove from the pan and set aside.

Stir-Fry the Vegetables
In the same pan, add another tablespoon of sesame oil. Add minced garlic and ginger, sauté for about 30 seconds until fragrant. Then, add broccoli, bell pepper, carrot, snow peas, and mushrooms. Stir-fry for about 5-7 minutes until vegetables are tender-crisp.
Combine and Serve

Make the Sauce
In a small bowl, mix the soy sauce and cornstarch with 2 tablespoons of water until well combined. Pour this mixture over the stir-fried vegetables and add the cooked tofu. Stir well to coat everything in the sauce and cook for another 2 minutes until the sauce thickens slightly.

Serve
Serve the stir-fry over the cooked rice. Garnish with sesame seeds and sliced green onions.
