Method
Prepare the Rice
Rinse the Rice
Rinse 2 cups of short-grain white rice under cold water until the water runs clear to remove excess starch.
Cook the Rice
Combine the rinsed rice and 2.5 cups of water in a rice cooker or pot. Cook according to the rice cooker's instructions or bring to a boil, then reduce heat, cover, and simmer for 20 minutes.
Season the Rice
Once cooked, fluff the rice with a fork. Add 2 tablespoons of sesame oil and 0.5 teaspoon of salt. Mix well and let it cool to room temperature.
Prepare the Fillings
Cook the Egg
Heat a non-stick skillet over medium heat. Pour in the beaten eggs and cook until set, then flip and cook for an additional minute. Remove from the skillet, cool slightly, and slice into strips.
Cook the Beef
In the same skillet, add a small amount of oil. Add the ground beef or bulgogi and cook until browned. Add 1 tablespoon of soy sauce and mix well. Remove from heat and let cool.
Assemble the Kimbap
Lay out Nori
Place a sheet of nori, shiny side down, on a bamboo sushi mat or a clean surface.
Spread the Rice
With wet hands, take a portion of the seasoned rice (about 1 cup) and spread it evenly over the nori, leaving a 1-inch border at the top.
Roll the Kimbap
Lift the bamboo mat and start rolling the kimbap tightly away from you. Roll until you reach the border of the nori. Moisten the edge with a bit of water to seal.
Slice and Serve
Use a sharp knife to slice the rolled kimbap into bite-sized pieces. Sprinkle with sesame seeds if desired and serve with soy sauce or pickled radish.
