    Chop Vegetables

    Dice the carrots, celery, and onion into small pieces. Mince the garlic and set aside.

    Prepare Potatoes

    Peel the potatoes and cut them into cubes.

    Prep Seasonal Greens

    Wash and roughly chop the seasonal greens.

Cooking

    Sauté Vegetables

    In a large pot, heat the olive oil over medium heat. Add the diced carrots, celery, and onion. Sauté for about 5-7 minutes, until the onions are translucent.

    Add Garlic

    Stir in the minced garlic and cook for an additional minute, until fragrant.

    Combine Broth Ingredients

    Add the cubed potatoes, vegetable broth, and water to the pot. Stir well to combine.

    Season the Soup

    Add the bay leaves, salt, black pepper, and thyme. Bring the mixture to a boil.

    Once boiling, reduce the heat to low and let the soup simmer for 20-25 minutes, or until the potatoes are tender.

    Stir in the chopped seasonal greens and let them wilt in the hot soup for about 5 minutes.

    Before serving, remove the bay leaves from the soup.
