For the Poached Eggs

    Prepare the Poaching Water

    In a large saucepan, bring 4 cups of water to a gentle simmer. Add 1 tablespoon of vinegar to the water.

    Poach the Eggs

    Crack each egg into a small bowl. Carefully slide each egg into the simmering water. Poach for about 3-4 minutes, or until the whites are set but the yolks remain runny. Remove the eggs with a slotted spoon and place on a paper towel to drain.

For the Hollandaise Sauce

    Melt the Butter

    In a small saucepan, melt 1 cup of unsalted butter over low heat. Remove from heat once melted and allow it to cool slightly.

    Whisk the Egg Yolks

    In a mixing bowl, whisk together 3 egg yolks, 1 tablespoon of lemon juice, and 1 teaspoon of salt until the mixture becomes thick and pale.

    Combine the Mixtures

    Gradually drizzle the warm melted butter into the egg yolk mixture while continuously whisking until the sauce is thickened and smooth. Add a pinch of cayenne pepper for a bit of heat.

For Assembly

    Toast the English Muffins

    Slice the English muffins in half and toast them until golden brown.

    Assemble the Dish

    On each toasted English muffin half, place a slice of cooked ham. Top with the poached egg and generously drizzle with the hollandaise sauce. Garnish with chopped chives.
