Mousse Preparation

Melt the Chocolate
Chop the dark chocolate into small pieces and place in a heatproof bowl. Melt the chocolate using a double boiler or in the microwave in 30-second intervals, stirring until smooth. Allow the melted chocolate to cool slightly.

Whisk the Egg Yolks
Add granulated sugar and vanilla extract to the egg yolks. Whisk until the mixture is pale and slightly thickened.

Combine Chocolate and Egg Yolks
Slowly pour the melted chocolate into the egg yolk mixture, stirring constantly until well combined.

Whip the Egg Whites
Using a clean, dry whisk or electric mixer, beat the egg whites with a pinch of salt until stiff peaks form.

Chill the Mousse
Transfer the mousse mixture into serving dishes or cups. Refrigerate for at least 2 hours, or until set.

Whip the Cream
In a chilled bowl, pour the heavy cream. Start whipping on low speed and gradually increase to high speed. Once it begins to thicken, add the powdered sugar and vanilla extract.

Continue Whipping
Continue whipping until soft peaks form. Be careful not to over-whip, as it can turn into butter.

Serve
Once the mousse is set, top each serving with a generous dollop of whipped cream. Optionally, you can garnish with chocolate shavings or berries.
