Pita Bread Preparation

Activate the Yeast
In a small bowl, combine the warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.

Make the Dough
In a large mixing bowl, combine the flour and salt. Create a well in the center and add the activated yeast mixture and olive oil. Mix until a dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic.

First Rise
Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for 1-2 hours or until doubled in size.

Shape the Pitas
Punch down the risen dough and divide it into 8 equal pieces. Shape each piece into a ball, then flatten into discs about 1/2 inch thick.

Second Rise
Cover the discs with a cloth and let them rise for another 30 minutes.

Preheat the Oven
Preheat your oven to 475°F (245°C) and place a baking stone or inverted baking sheet inside.

Bake the Pitas
Carefully place the pitas on the hot baking stone or sheet. Bake for 5-7 minutes until they puff up and are lightly golden.

Cool and Serve
Remove the pitas from the oven and let them cool on a wire rack. Serve warm or at room temperature.
