Prepare the Potatoes
Preheat your oven to 425°F (220°C). Wash and cut the potatoes into wedges, then toss them in a bowl with olive oil, salt, and pepper. Spread the wedges on a baking sheet in a single layer and bake for 30-35 minutes until golden and crispy, flipping halfway through.

Make the Falafel
In a food processor, combine chickpeas, garlic, parsley, cumin, coriander, baking powder, salt, and black pepper. Pulse until the mixture is well combined but still slightly chunky. Form the mixture into small balls or patties.

Assemble the Bowl
In a bowl, layer the potato wedges, topped with falafel, then add shredded lettuce, diced tomatoes, sliced onion, olives, and crumbled feta. Drizzle with tzatziki sauce and your choice of dressing.
