Prepare the Potatoes
Preheat the oven to 425°F (220°C). Wash and cut the potatoes into wedges. Toss them in olive oil, salt, and garlic powder. Spread them on a baking sheet and roast in the oven for 25-30 minutes or until golden brown and crispy.

Cook the Gyro Meat
In a skillet over medium heat, cook the ground lamb or beef until browned. Add onion powder, oregano, and any other desired seasonings; cook for an additional 5 minutes, stirring occasionally.

Assemble the Bowl
In a large serving bowl, layer the roasted potato wedges, cooked gyro meat, and top with shredded lettuce, diced tomatoes, sliced red onion, sliced olives, crumbled feta cheese, and a drizzle of dressing. Serve with tzatziki sauce on the side.
