    Prepare the Falafel

    Soak the dried chickpeas in water overnight. Drain and rinse. In a food processor, combine soaked chickpeas, garlic, parsley, cumin, coriander, baking powder, salt, and pepper. Blend until a coarse mixture forms.

    Shape the Falafel

    Form the mixture into small balls or patties, about 1.5 inches in diameter.

    Fry the Falafel

    Heat olive oil in a deep skillet over medium heat. Fry the falafel in batches for about 3-4 minutes on each side, or until golden brown. Drain on paper towels.

    Prepare the Pita

    Warm the pita bread in a dry skillet or oven for a few minutes until soft.

    Assemble the Falafel Pita

    Stuff the warm pita with lettuce, sliced tomato, onion, black olives, and feta cheese. Add several falafel balls and drizzle with tzatziki sauce. Serve immediately.
