Soak the Beans
Rinse the dried garbanzo beans and soak them in water overnight or for at least 8 hours. Drain and rinse before using.

Prepare the Mixture
In a food processor, combine the soaked garbanzo beans, parsley, onion, garlic, cumin, coriander, baking powder, salt, and black pepper. Pulse until a coarse mixture forms, but be careful not to over-process. It should hold together when formed into a ball.

Shape the Falafel
Using your hands, shape the mixture into small balls or patties, about the size of a golf ball.

Heat the Oil
In a deep skillet or frying pan, heat the olive oil over medium heat until it reaches 350°F (175°C). You can test this by dropping a small piece of the mixture into the oil; if it sizzles, the oil is ready.

Fry the Falafel
Carefully place the falafel balls into the hot oil, making sure not to overcrowd the pan. Fry them for about 3-4 minutes on each side, or until they are golden brown and crispy. Remove and drain on paper towels.

Serve
Serve the falafel warm with tahini sauce, salad, or your favorite dipping sauce.
