Baking Directions
Prepare Smoker
Preheat your smoker to 350°F (175°C). If using wood chips, soak them in water for at least 30 minutes before use.
Cream Butter and Sugars
In a large mixing bowl, cream together the unsalted butter, brown sugar, and granulated sugar until light and fluffy.
Add Eggs and Vanilla
Beat in the eggs, one at a time, followed by the vanilla extract until well combined.
Combine Dry Ingredients
In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
Mix Dry and Wet Ingredients
Gradually add the dry ingredients to the wet mixture, mixing until just combined. Do not overmix.
Fold in Chocolate Chips
Gently fold in the semisweet chocolate chips until evenly distributed.
Using a cookie scoop or tablespoon, drop dough balls onto a baking sheet lined with parchment paper, leaving space between each.
Place the baking sheet in the smoker and bake for 10-12 minutes, or until the edges are golden brown.
Add Flaky Sea Salt
Once out of the smoker, sprinkle with flaky sea salt while still warm.
Cool and Serve
Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
