Prepare the Brisket

Trim excess fat from the brisket and rub it with salt, black pepper, garlic powder, and paprika.

Smoke the Brisket

Preheat your smoker to 225°F (107°C), add the wood chips, and place the brisket in the smoker. Smoke for about 1.5 hours per pound, or until the internal temperature reaches 195°F (90°C).

Rest the Brisket

Remove the brisket from the smoker and let it rest for at least 30 minutes before slicing.

Prepare the Sides

While the brisket is resting, prepare your chosen sides. For coleslaw, combine shredded cabbage, carrots, and dressing. For baked beans, heat canned beans with spices and brown sugar.

Serve

Slice the brisket against the grain and serve on a plate with your two favorite sides.
