Preparing the Candy Base

In a medium saucepan, combine the granulated sugar, light corn syrup, and water over medium heat. Stir until the sugar is fully dissolved.

Bring the mixture to a boil without stirring. Using a candy thermometer, heat the mixture to 240°F (115°C).

While the mixture is heating, in a small bowl, sprinkle the unflavored gelatin over 1/2 cup of cold water and let it bloom for about 5 minutes.

Once the sugar mixture reaches 240°F, remove from heat and add the bloomed gelatin and salt. Stir until completely dissolved.

Stir in the vanilla extract.

Line a baking dish (9x13 inch) with parchment paper. Pour the red mixture into one side of the dish, followed by the orange, yellow, green, blue, and purple mixtures in stripes.

Use a toothpick to gently swirl the colors together for a marbled effect, but do not overmix.

Let the candy sit at room temperature for about 4 hours or until fully set.
