Cut Potatoes into Fries
Cut the peeled potatoes into long strips, approximately 1/4 inch thick, to create fries. Ensure they are uniform in thickness for even cooking.

Soak the Fries
Place the cut fries in a bowl of cold water and let them soak for at least 30 minutes. This helps remove excess starch and results in crispier fries.

Heat the Oil
In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can use a thermometer to check the temperature.

Dry the Fries
After soaking, drain the fries and pat them dry with paper towels to remove excess moisture. This step is crucial to prevent oil splatters.

Fry the Potatoes (First Fry)
Carefully add a batch of fries to the hot oil. Fry them for about 3-4 minutes or until they are pale and soft but not browned. Remove them from the oil and place them on a paper towel-lined plate.

Fry the Potatoes (Second Fry)
Increase the heat to high and return the fries to the oil in batches. Fry for an additional 3-5 minutes until they are golden brown and crispy. Remove them from the oil and drain on paper towels.

While the fries are still hot, sprinkle them with salt and black pepper to taste. Toss to ensure even coating.
