Preheat the Oven
Preheat your oven to 350°F (175°C) to prepare for baking your cookies.

Crush the Oreo Cookies
In a food processor, crush 2 cups of Oreo cookies until they are fine crumbs. Set aside for later use.
Cookie Dough

Mix Wet Ingredients
In a large mixing bowl, cream together 1 cup of softened butter and 1 cup of granulated sugar until light and fluffy. Add in 2 large eggs and 2 tsp of vanilla extract, mixing well.

Combine Dry Ingredients
In another bowl, whisk together 1 cup of all-purpose flour, 1 tsp of baking powder, and 1 tsp of salt.

Combine All Ingredients
Gradually add the dry ingredients to the wet mixture, mixing until just combined. Fold in the crushed Oreo cookies and 1 cup of semi-sweet chocolate chips.
Baking

Shape the Cookies
Scoop tablespoon-sized balls of dough onto a lined baking sheet, spacing them about 2 inches apart.

Add Toppings
Sprinkle the tops of the cookie dough balls with 1 cup of crushed Oreo cookies for added texture and flavor.

Bake
Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown. The centers may look slightly underbaked but will set as they cool.

Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
