Method
Crust
- 1
Prepare the crust
Preheat your oven to 325°F (160°C). In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined and the mixture resembles wet sand.
- 2
Form the crust
Press the mixture firmly into the bottom of a 9-inch springform pan to create an even layer. Bake in the preheated oven for about 10 minutes, then remove and let cool.
Filling
- 3
Prepare the filling
In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Add the granulated sugar and continue to mix until well combined.
- 4
Add remaining ingredients
Mix in the sour cream and vanilla extract until smooth. Add the eggs one at a time, mixing on low speed after each addition until just combined. Do not overmix.
- 5
Bake the cheesecake
Pour the filling over the cooled crust in the springform pan. Bake in the oven for 55-60 minutes or until the center is set but still slightly jiggly. Turn off the oven and crack the door open, allowing the cheesecake to cool gradually for about 1 hour.
Topping
- 6
Prepare the topping
While the cheesecake is cooling, wash the fresh mixed berries and pat them dry. In a small bowl, toss the berries with powdered sugar to coat them lightly.
- 7
Serve the cheesecake
Once the cheesecake has cooled completely, refrigerate for at least 4 hours or overnight. Before serving, top with the sugared berries. Slice and enjoy!
