In a large bowl, combine the all-purpose flour, baking powder, garlic powder, salt, and black pepper. Gradually whisk in the beer until the batter is smooth and free of lumps.

In a deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Coat the Cheese Curds
Dip each cheese curd into the batter, ensuring an even coat.

Fry the Cheese Curds
Carefully place the battered cheese curds into the hot oil in small batches. Fry for about 2-3 minutes or until they are golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

In a small bowl, combine the ketchup, chopped chipotle peppers, lime juice, honey, and salt. Mix well until fully incorporated.
