Preparation of Fries

    Wash and peel the russet potatoes. Cut them into even strips, about 1/4 inch thick.

    Place the cut potatoes in a bowl of cold water and soak for at least 30 minutes. This helps to remove excess starch and makes them crispier.

    After soaking, drain the water and spread the potatoes on a clean kitchen towel. Pat them dry completely to avoid oil splatter during frying.

Frying the Fries

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.
