Veggie Patty

Toppings

Method

Veggie Patty Preparation

  1. 1

    Cook Quinoa

Rinse the quinoa under cold water. In a saucepan, combine 1/2 cup of quinoa with 1 cup of water. Bring to a boil, then reduce to a simmer, cover, and cook for about 15 minutes or until the quinoa is fluffy and water is absorbed. Set aside to cool.

  2. 2

    Prepare Vegetables

Finely chop the bell pepper and onion. Grate the carrot and mince the garlic.

  3. 3

    Mix Ingredients

In a large bowl, combine the black beans (mashed), cooked quinoa, chopped bell pepper, grated carrot, chopped onion, minced garlic, ground cumin, ground paprika, egg, breadcrumbs, salt, and black pepper. Mix well until all ingredients are evenly combined.

  4. 4

    Form Patties

Divide the mixture into two equal portions and shape each portion into a patty.

  5. 5

    Cook Patties

Heat a non-stick skillet over medium heat. Add a little oil if desired. Cook each patty for about 4-5 minutes on each side or until golden brown.

Assemble Burger

  1. 6

    Prepare Buns

Toast the burger buns lightly in the same skillet or a toaster.

  2. 7

    Add Toppings

Place a veggie patty on the bottom half of each bun. Top with sliced avocado and a handful of sprouts.

  3. 8

    Serve

Cover with the top half of the bun and serve immediately.
