Prepare Rice

Cook the Rice
Rinse the rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until rice is tender and water is absorbed. Remove from heat and let it sit covered for 5 minutes.

Prepare the Stir Fry Sauce
In a small bowl, mix together the soy sauce, sesame oil, cornstarch, water, and grated ginger until smooth. Set aside.

Stir Fry the Vegetables
In a large skillet or wok, heat a tablespoon of oil over medium-high heat. Add the sliced onion and cook for 2 minutes until slightly softened. Add the minced garlic and ginger, cooking for an additional minute. Then, add the bell peppers, carrots, broccoli, and snap peas. Stir fry for about 5-7 minutes, or until the vegetables are tender-crisp.

Add Sauce
Pour the prepared stir fry sauce over the cooked vegetables. Stir well to coat and cook for another 2-3 minutes until the sauce thickens and everything is heated through.

Plate the Dish
Serve the vegetable stir fry over a bed of rice. Enjoy your healthy and colorful meal!
